The Roman tradition of the 'quinto quarto' — the fifth quarter — is perhaps the most distinctive feature of Roman cuisine and one of the most significant in Italian food history. The 'quinto quarto' refers to the parts of the slaughtered animal left after the four 'quarters' (the prime cuts) had been taken by the wealthy: offal, tripe, tail, trotters, brain, liver, lung, intestine, and head. These were sold cheaply to the slaughterhouse workers of Testaccio and their families, who developed a brilliantly inventive cuisine from them. Dishes like trippa allá romana (tripe in tomato sauce), pajata (milk-fed veal intestines), coda allá vaccinara (oxtail braised with cocoa and pine nuts), and animelle (sweetbreads) became the defining food of working-class Rome and are now celebrated in the city's finest restaurants. The proverb expresses the philosophy underlying this cuisine: waste is a moral failure; ingenuity transforms the discarded into the extraordinary.
