Lombardy is one of the great food regions of Italy: risotto allá milanese with its golden saffron, ossobuco braised until it falls from the bone, cassoeula in winter, cotoletta allá milanese fried in butter. This proverb reflects the Lombard conviction that good food is not mere pleasure but the basis of civilised life. The saying was born in an era of genuine food insecurity, when the contadino ate polenta for breakfast, lunch, and dinner, and a full belly was a real achievement not to be taken for granted. Today it is invoked with warm humour after a Sunday lunch, as justification for a second helping of risotto, or as a gentle rebuke to someone making life complicated. The Milanese use it with the same directness they apply to everything: once you are fed, the world looks better.
